This recipe is so freaking simple, I am not even sure if it deserves the title “recipe”. It more like: throw anything you’re currently craving in a dish and eat it. I did wanted to share this pasta pesto with shrimps with you nevertheless, because pasta pesto is always a great “go-to” dish when in a hurry.
Pasta pesto is also a great dish for when you can’t really cook, but do want to make an effort by putting something self-made on the table. My advize for anyone who’s lacking cooking skills is always to buy good products. And to make pasta.
Pasta is just great for anyone lacking time, inspiration or skills. It’s very simple to cook, and I still need to meet the first person who doesn’t like it. AND, when you use good products, it’s easily turned into a great meal.
So if you’re making this pasta, you’ll know what to do: buy the most fresh and good-looking vegetables you can find, go for fresh fish and the more expensive pesto (or even better: make the pesto yourself).
- 150g penne pasta
- 3 tbsp green pesto
- 1/2 red pepper
- 1/4 courgette
- About 10 cherry tomatoes
- 90g shrimps, like brown shrimp
- Extra vierge olive oil
- Salt & Pepper
Cook the pasta in salted water all-dente (about 8 minutes).
Meanwhile, chop the vegetables in pieces. Heat olive oil in a pan and cook the courgette and paprika for 6 minutes. Add the shrimps and cook for another 4 minutes. Then lower the heat and add the cherry tomatoes and cook 3 more minutes.
Drain the pasta, but leave a little bit of the water. Mix the pasta with pesto and some olive oil. When still too dry, add a bit of the cooking-water.
Serve the pasta with the shrimps and vegetables and freshly grated pepper.
